Almond Mocha Latte saves the day
Sometimes you just have one of those days where you get off to a bad start. Could be that you didn’t get a good night’s sleep because you had a child nestled against you acting like a heat factory and using your chest, stomach, head or feet as a pillow. Or your mind is working overdrive because you didn’t unwind before bed. Well, today was one of those days. And it basically started just as I described above.
We’ve been working very hard to get our daughter to sleep in her own bed full time. Its a constant struggles. Last night we made it 2 hours and that was after she finally fell asleep just before midnight.
There wasn’t enough coffee in the world to make me alert for a day in the office but I made it through. After dinner and the after-dinner routine of bath/book time with my daughter I felt like I needed some time to unwind and to maybe lose myself in a book and a good cup of coffee. I’m one of those really fortunate people who can have shots of espresso and be asleep 2 minutes later if I want to so I can still drink regular coffee in the evening.
Tonight, I wanted something a bit more indulgent. This next sentence isn’t going to sound indulgent – I started pulling out pantry shelves to see what was there and found a jar of almond amaretto flavoured instant coffee that my mother keeps on hand since she feels that the coffee we drink is just too strong. Over the years she has converted many a person to her evil, dark instant coffee ways. I guess she finally got me.
To kick if up a notch, I pulled out my magic bullet, a remnant from my pre-Vitamix days. I use it so rarely but for the purpose of frothing milk it can’t be beat. I added a cup of milk and shot of Nestle Chocolate syrup to the canister while boiling water for my instant coffee. Those are some words I never though I’d write in this blog. 30 seconds of blending the milk later, I placed it in the microwave and while heating kept a close eye until the milk started to rise creating warm frothy milk and a layer of stiff foam.
Add a tbsp of instant coffee to 1/2 cup of boiling water. Stir and then add your frothed milk. Sit back, relax and enjoy your Almond Mocha Latte. All made in the time you can boil a cup of water and for the fraction of the price of a Starbucks latte. Here’s hoping tomorrow starts off on a better note.
