Avocado Salad Dressing

Avocado Anyone?

I’m in love with avocados. Seriously. I think this is another case of being deprived as a kid and now I’m making up for it. My dad is such a meat and potato man that sometimes dinner time was…well, a little boring to say the least.  The only time we had more adventurous food was when my dad was travelling or the girls  (my mom and her high school girlfriends) were spending a week at the cottage in the summer. My dad hates going to the cottage so we could always have all the yummy foods when we were there – things like tacos, nachos, stir frys, 7 layer dips, etc.  I’m getting hungry just thinking about it.  I can’t remember the first time I had guacamole but I do know that it was love at first bite.

Versatile, Creamy and Yummy

I’m pretty certain that when most people hear avocado they think guacamole and really, why wouldn’t you? Guacamole is one of my most favourite things in the world and its so easy to make in the blender (check out my 5 min recipe here) but there are lots of other great ways to use. Just this past week, I’ve had avocado in my smoothie, made a creamy avocado dressing and had an avocado and arugula salad.  I’ll share my avocado smoothie recipe later this week but today’s focus is on the creamy avocado dressing and the super simple avocado and parmesan salad. There really is nothing better than simple salads when the temperatures are warm outside. Here’s to hoping these warm temps stay around for a long time. I’m not ready for the cold weather and all that comes with it quite yet. 

2 Minutes to Fresh Home-made Avocado Salad Dressing

I feel so accomplished when I make something from scratch especially salad dressing. I should only use home made salad dressing because if I’m honest with you, store bought dressing goes into my fridge to die.  One, I get bored quickly and two, I can never find anything in that darn fridge until its past expiry. So frustrating. Then when I do a purge I will almost always find at least 2-3 bottles of Caesar dressing that my husband has bought as a dip for carrot and celery sticks…why buy that processed stuff when I know my homemade Caesar dressing is 1000 times better – but that’s a story for another day.

Today, is all about this yummy and creamy Avocado salad dressing. It is sure to impress and the best part? Aside from the avocado, it uses only ingredients that you are sure to have on hand in your pantry. I make small batches as I’m usually cooking for just two but you can scale up as required.

Avocado Salad Dressing

Prep Time: 2 minutes
Total Time: 2 minutes

2 mins from start to finish

Ingredients

  • 1/3 avocado, peel removed
  • 1/4 cup olive oil
  • 2 tsp honey
  • juice of one lime

Instructions

  1. Add all ingredients to your blender. For this recipe I used my magic bullet due to the small size of the recipe.
  2. Blend until smooth and creamy.
