Easy & Delicious Tortilla Blender Soup (Vitamix)

You can truly make soup in a blender!

Who would have thought you could make fresh tortilla blender soup with everyday ingredients in under ten minutes without turning on your stovetop? I wouldn’t mislead you, and I can vouch that this is my go-to soup this winter (but it is also very appropriate to enjoy this year-round). I like it because it is quick and easily adapted based on the ingredients and requires no prep time. I still remember the first time I made this soup as I was so surprised at how much flavour it delivered with so little effort.

You can top your soup with so many different and wonderful things like cheese, sour cream, fresh cilantro, tortilla chips, etc, all to your personal preference. It can also be made purely vegan by using vegetable broth and substituting cheese and sour cream for vegan options.

To make the base soup, add your fresh Roma tomato, carrots, celery, broth, garlic, and my secret ingredient: chipotle puree with your spices of choice and set the blender on the soup/hot setting. While it is cooking, get the red bell pepper and green bell pepper, black beans, and canned corn (or fresh sweet corn kernels) ready to go. You can add some shredded chicken breasts, rotisserie chicken or turkey, but you won’t miss the meat as this is a hearty soup. The work effort is minimal, yet everyone who tries this will think that you spent time at the stove.

When the soup is finished blending, pour it into two individual bowls and then top with your favourite toppings.  This is great when you have two individuals with different tastes.  One person may want to top it with corn tortillas and black pepper, while another may want to top it with jalapeno pepper or a squeeze of lime juice for freshness.  The versatility and the variety of potential toppings help keep this soup interesting if it is part of your rotation.  This is one of my favourite soups to make when I’m working from home.

This recipe was inspired by the Vitamix tortilla soup original recipe that Vitamix demonstrators often use. In fact, I know personally a couple of people who purchased their Vitamix after seeing this recipe made.  Being able to enjoy fresh soup to your own specific tastes is a huge selling feature. Clean-up is also a breeze with this recipe. There is no Dutch oven or saucepan to clean.  The recipe could easily become one of your favourite  soup recipes due to the flavours and the use of simple ingredients 

How can I add more heat to this Tortilla Soup?

There are a plethora of options. We like to up the chipotle puree, add a bit of our favourite Adobo sauce or add Chipotle Tobasco sauce. You could also try Jalapenos or add a bit of chili powder.


What other vegetables could I add to this Soup?

You could easily add onions to this tortilla soup. I can’t add those when I’m sharing a batch with my husband, but if making for myself, I add them just like I add red and green peppers. Another great option is to add a bit of fresh spinach in the last step.


Can this recipe make a Vegan soup?

Yes, it can.  While the recipe is for a vegetarian tortilla soup, the base of the soup, when using vegetable broth, is vegan and vegetarian-friendly. To make vegan tortilla soup, you must swap out the optional toppings, like sour cream and cheese, for something vegan-friendly. Slices of avocado are always a good topping.


What other toppings can I add to the Tortilla Soup?

In addition to cheese, sour cream, avocado, and tortilla chips, crispy tortilla strips, you could also try avocado crema, green onions, and fresh cilantro.

Can I make this soup without a Vitamix?

Yes, you can.  The benefit of the Vitamix container and blender is that it will heat the soup simultaneously as blending, so there is no need to heat it separately.  If you don’t have a Vitamix or another high-speed, high-powered blender that will heat the soup while blending, you can follow the instructions, but instead of running the soup cycle, blender for 30 seconds and then continue with the next steps. Once you have added the peppers, black beans and corn, pulse as directed and pour the entire mixture into a saucepan and heat on your stovetop over medium heat.

I’m getting hungry for some more blender tortilla soup just thinking about it. I’m sure eating this a couple of times daily isn’t wrong.

From ingredients to fresh tortilla blender soup in under 10 minutes.

Ingredients

Tortilla Soup

  • 1 Roma tomato
  • 6-8 baby carrots
  • one stalk of celery
  • 2 cups vegetable or chicken broth
  • 1 tsp chipotle puree, optional
  • 1 garlic clove
  • 1 tsp of cajun spice or taco seasoning
  • 1/3 red bell pepper
  • 1/3 green bell pepper
  • 1/2 cup black beans, rinsed
  • 1/2 cup canned corn
  • lime

Toppings (optional)

  • shredded cheese
  • cilantro
  • sour cream
  • tortilla chips
  • avocado
  • Salt and Pepper to taste

Instructions

  1. Place first 7 ingredients in blender and let it run the hot/soup cycle.
  2. After approximately 6 minutes, steam should be leaving the vented top.
  3. Cut peppers into strips.
  4. Add 1/2 the cut peppers to the blender and blend on medium for 30 seconds.
  5. Add remaining peppers, black beans and corn and pulse 5-10 times until you have reached your desired consistency.
  6. This will leave you with a soup that has some thickness and texture.
  7. Pour into two bowls and sprinkle each with juice from 1/4 lime. Add your favourite toppings and enjoy.

Notes

You can also add tortilla chips to the blender in the last step and pulse. I prefer to dip them in the soup or crumble on top as I'm not a big fan of soggy chips.

For a vegan option, use vegetable broth and substitute cheese and sour cream for vegan toppings.

    1. I just got my vitamix about a month ago and I’ve only made smoothies, juices and ‘nice cream’. So when I found your recipe on Pinterest, let’s say that I was ecstatic to try it out! I’m a huge fan of tortilla soup but haven’t had it since I went vegan almost 3 years ago. This recipe was easy to veganize, and since I like my food spicy, I added a Serrano and jalapeño for an extra kick.

      Needless to say, my whole family enjoyed the soup and everyone asked for seconds!!!

    1. Hi Anne, that is a great question. I have always made it to serve immediately so I can’t confirm. My gut says this recipe may not freeze very well.

  3. Just made tortilla soup in the Vitamix with some changes. I used two cups vegetable broth, one carrot, one stalk celery, one clove garlic, a slice of onion and green bell pepper. Used salt and pepper to taste with 2 teaspoons taco seasoning and a dash of cumin. Instead of a Roma tomato I used Mexican style diced tomatoes drained and 1/2 cup mexicorn to thicken along with a handful of tortilla chips. I used the soup program and then pulsed in more mexicorn and a cup of chicken. It was so good I almost made myself sick eating too much.

  4. Great tasting soup! Night and light but filling at the same time. Made it in my Vitamix. I I’ve that I can get veggies in this version of the soup.

  5. I had an issue with the soup escaping my 64oz Vitamix container when I put it on high. It was oozing from the kid’s seal as well as the spout – nothing came out the clear top. Is this common?

    Soup was DELISH nonetheless! Even my husband (who swore he’d be hungry after) enjoyed every bite!

    1. I’ve never had a leaking issue with my Vitamix Jar. It might be worth running a cleaning cycle (add water + a drop of liquid dish soap) and see if you get water leaking out the lid. If so, I’d reach out to Vitamix Customer Service.

  9. This soup turned out great! I think if I had to change anything, it’d be adding the last chunks of the red bell pepper before the beans and corn, as they were harder to cut into smaller pieces than the beans and corn.

    Lastly, I added one jalapeño in place of the chipotle ingredient since I didn’t have that in my pantry. It gave it a kick for sure, just how I prefer. Added unsalted tortilla chips on top, greek yogurt, cilantro, and avocado. I’ll be making this again, maybe with some chicken breast!

    1. I don’t have a Ninja Blender so can’t give specific instructions. If your blender has the ability to heat as it blends, then you should be able to follow similar instructions. If it doesn’t, you could try blending the ingredients as indicated and then transfer to a pot to heat on the stovetop.
