Watermelon Berry Mojito

We went away for a long weekend trip to Las Vegas. It was a great getaway and a surprise for my husband’s 40th birthday…I’m a pretty good wife, if I do say so myself, and I kept it a secret for over 5 months. We spent two of our afternoons away around the pool sipping mojitos and enjoying life.

When we came back, our garden looked like it had been completely overrun by some crazy week peeking under the fence from our neighbour’s yard and mint.  Just a month ago we had one little sprig poking out of the soil, a remnant from last year, and now I think I could probably share with the entire city of Toronto and have left overs. Not one to waste good mint, I had to think of some ways to make a dent in it. Mojitos are always a good call but wanted to try something a little bit different. 

Here is where the watermelon comes in…small, seedless watermelons were front and center (and on sale) at our local grocery store. I’m a sucker for cute and this watermelon really and truly was that.  Strawberries and blueberries were also on sale so figured I could make a pretty tasty drink with those in combo. My husband looked at me with skepticism as I started to put the watermelon in the blender but I’m starting to get used to that expression.  Watermelon berry mojitos are getting added to the drink rotation.

I pureed about 1/4 of the small watermelon (about 2 cups loosely packed) and then strained. 

I muddled the berries, mint, sugar and lime juice in the bottom of two glasses and added white rum.  Then split the strained watermelon mixture across the two glasses and filled the remainder of the glass with sparkling water.  (I think this drink would be just as good without the Rum)

My hubby is still detoxing from our Vegas trip so I drank both glasses – great way to enjoy a sunny Saturday. Can’t get much better than a refreshing watermelon berry mojito, a little Pan-Am live sports action and sunshine…well maybe if I was doing all of this on the beach somewhere but we can’t have it all.

A twist on the classic mojito

Ingredients

  • 2 cups watermelon
  • 1/3 cup strawberry/blueberry combo
  • 1 lime
  • 2 ounces white rum
  • 2 tsp white sugar
  • 10 mint leaves, + extra for garnish
  • seltzer, carbonated water

Instructions

  1. Puree watermelon in the blender, strain and set aside.
  2. Divide mint, sugar and berries across two glasses. Add juice of half a lime to each glass and muddle contents.
  3. Divide watermelon puree across two glasses and top with sparkling water (or seltzer or Sprite Zero)
  4. Garnish with mint and serve

  1. This is the perfect Summer refresher! Love a classic mojito and I never have tried a watermelon or berry flavoured one before.. so this recipe is one I am dying to try.

    1. Hope you enjoy it as much as I did. Always pleasantly surprised when I like something almost as much as the original.
